I’m not sure if its actually a Mexican dish or not. It looks like you may be able to find it at a store called Costco and its about $3.50 a pop. If that’s the case though, its almost as good as a Mexican take on the Beef Barbacoa, which you could make yourself by blending the ingredients in a blender.
Its good because it keeps you full and you can eat it right out of the bowl.

Apparently, amargada looks very similar to the Beef Barbacoa, but without the cheese. It has an assortment of fresh vegetables, including peppers, onions, potatoes, and celery. It also has peppers in the meat, but in an egg-y breaded form, which is actually pretty good. I think that is definitely the best part of amargada, along with the celery.
It’s a bit different, but it’s still a good take on the Beef Barbacoa, especially with the peppers and celery. It also has an interesting spin on the classic gringo dish, which is to cut the peppers, throw them on a pan, and then cook them in a little oil.
We love to chop up our vegetables and then throw them onto the pan, then when they start to cook, put them right back on the pan and cook them a few more minutes. It makes for a nice and messy dinner, but then, of course, the peppers and onion are also very delicious.
